Organic Tourism: Driving organic food system by conscious hospitality businesses

Short summary: Despite the increasing interest in organic foods, many hotels and restaurants are reluctant to adopt this sustainable practice. This research is aimed at studying perceptions and behaviours of the conscious hospitality businesses who participate in the “Organic Tourism” movement to drive Thailand’s organic food systems but face the dilemma of compromising between achieving business returns and sustainability. By following through the one and half years’ movement, results illustrated the no compromise strategies that involved collaboration between organic farmers, businesses and consumers, and the adjustment of business focus from the company management to value chain management, from the employee performance to employee engagement, and from the strategic outputs to the strategic values.
